i'm not the best baker in the world, but i thought i'd try making pineapple upside down cake in our new cast iron skillet.
not too shabby! it was yummy too - i had to work hard not to eat the entire thing in one sitting (the last piece was devoured by monday morning). the kiddos loved it. hubby, who is not a pineapple person, liked it too and said the cake had a cornbread consistency that he liked.
got the idea from lucinda scala quinn's recipe, except i used the recipe from the better homes cookbook becos i didn't have pecans or limes.
i also made another batch of homemade ramen dinner, with chicken, snow peas and broccolini instead:
it was okay, but i preferred it with beef instead. the snow peas was a good addition, but i think i'd leave the broccolini as a side instead. it's fun to experiment.

My MIL gave me the handle pad years ago. Good luck trying the ramen dinner!
