pineapple upside down cake

i'm not the best baker in the world, but i thought i'd try making pineapple upside down cake in our new cast iron skillet.

not too shabby!  it was yummy too - i had to work hard not to eat the entire thing in one sitting (the last piece was devoured by monday morning).  the kiddos loved it.  hubby, who is not a pineapple person, liked it too and said the cake had a cornbread consistency that he liked.

got the idea from lucinda scala quinn's recipe, except i used the recipe from the better homes cookbook becos i didn't have pecans or limes.

i also made another batch of homemade ramen dinner, with chicken, snow peas and broccolini instead:

it was okay, but i preferred it with beef instead.  the snow peas was a good addition, but i think i'd leave the broccolini as a side instead.  it's fun to experiment.

  1. Yummy pineapple upside down cake. I like the sleeve you have for your handle on your skillet.

I think I am going to have to try a homemade ramen dinner> I like the idea of the peas and broccoli.

  2. My MIL gave me the handle pad years ago. Good luck trying the ramen dinner!

  3. Did you say you were inviting me over for dinner? :)
    It looks so yummy!

  4. i would, if you could tolerate the kids and the mess! :)
