skillet sausage scramble

when i need a quick meal, i make a skillet scramble.

i brown a pound of ground sausage and one small chopped onion...


when the sausage is browned and the onion is soft and translucent i add a small bag of frozen hash browns and cook them through...


i add six beaten eggs to the mixture and stir until cooked through...


then i add a couple handfuls of shredded cheese (this is cheddar but you can use whatever cheese spins your beanie) and stir until melted...


i add a little more cheese on top to get all gooey, then dish out and serve!


season to taste - i don't add extra seasonings other than fresh ground pepper becos the sausage and cheese are salty on their own, although hubby adds hot sauce to his serving.

this dish can be modified to taste and diet.  i think turkey sausage would work (if pork is off the menu) or shredded ham or bacon.  if using a leaner meat i'd brown it with a touch of vegetable or olive oil to prevent sticking to the skillet. i've never tried, but i bet diced potatoes (which can be bought frozen as well, they're usually sold with the hash browns) would taste good too!  i use six eggs but more could be added (or left out entirely).  veggies could be added to stretch out the dish (i bet chopped sauted sweet peppers would taste outrageous in this meal!)

it's not the most beautiful meal nor the healthiest but it's quick, filling and good!

  1. That actually looks really good! W got a bunch of venison sausage from his dad and I have a bunch of mozz cheese that I need to use up... it's the perfect recipe for my fridge right now :)
